I am looking for recipes for Chinese food as good as what we eat in a restaurant. Who has the best recipe for fried rice?

Fried Rice

I always thought the fried rice comfort food par excellence. Think about it - a cup of rice, cooked to the proper consistency, full of pieces of meat and vegetables. What could be more perfect?

Of course, the home of the production is sometimes easier said than done. Ideally, the fried rice should be soft, light and easy to take with chopsticks. Moreover, there is a philosophical debate about what is best - freshly cooked rice or leftover from last night. I personally prefer to use the leftover cold rice, but I am a new pot, if necessary, to cook.

The Chinese have enjoyed themselves, which is fried rice for centuries, it is not surprising that the rice is grown in about 4000 BC. Yangzhou rice, a bowl of Shanghai, colors, dates from the Sui Dynasty (589 - 618). Of course there are regional differences - an apartment in the north is likely to contain ham and vegetables like leeks and scallions, while the Cantonese fried rice or shrimp often barbec FeaturesVED pork. But the beauty of it is fried rice is very adaptable. As Chow Mein is a perfect meal for nights when you clean the fridge and wanted to get rid of any leftover meat or vegetables.

Here is a recipe for fried rice, is that you depending on what vegetables you have on hand can customize:

Fried rice recipe:
4 to 6 servings
Ingredients:
4 cups cold cooked rice
4 tablespoons oil
3 eggs, beaten
1 teaspoon salt
Pepper to taste
1 spring onion finely chopped

Instructions:

Remove the rice with wet hands
Heat the oil in a wok over high heat. Stir fry the rice quickly, turning spatula constantly until the rice is hot.
A well in the center of rice. Pour the egg mixture. Stir until there are scrambled eggs. Then add the egg fried rice, mix well. Season with salt and pepper. Saute 30 seconds. Add chives.

Can be prepared in advance. Can be frozen. Reheat before serving.
